I must admit I know close to nothing about Discord, so this was very interesting. My only thought to add is about monitoring the distribution of Bellingcat content on announcement channels. I guess it's not possible to get a breakdown of how many people per server, but the overall referral traffic coming from Bellingcat must be available in the Referrer section of Bellingcat's analytics platform, I guess?
Very good question but I don't know for sure – it could also be tracked as track from private messaging app and end up in a much bigger referrals group. A much easier way to track that would be to implement UTMs to track each URL shared in the announcement channels.
